Can’t believe it is already Thursday already!- im not complaining!
Things have been busy busy lately but I have made a few super tasty easy concoctions that I thought I’d share 🙂
On Sunday I prepped my weekly salad and this one is a gooder!
1 1/2 cups of dried wild rice (or brown rice or quinoa) prepared
3 chopped carrots
2 peppers chopped
1 cup of cherry tomatoes cut in half
Chopped up snap peas
1 bunch of parsley chopped
1-2 cloves of garlic
1 cup organic greek yogurt (plain)
2 tbsp avocado oil
Juice of 1 lime
Pinch of salt
Blend up dressing ingredient and toss with the rest of the salad- that’s it! So yummy! The salad only gets better over the next few days as the dressing mingles. I’ve been grilling up fish and chicken to go with the salad all week.
Recipe número deux
This is my take on my go to chipotle salad.
4 chicken breasts
1 small jar of salsa
2 bunches of cilantro
Either a bag of colslaw or fresh made
Combine chicken and salsa in slow cooker for 7 hours on low. Once done, shred up meat and add in a bunch of cilantro chopped
Squeeze 1 lime over a bowl of coleslaw, drizzle about 1-2 tbsp of abocado oil (olive oil will do) add a pinch of salt and about 1/4 cup chopped cilantro and stir to combine.
Mash up 2 avocados with salt and lime juice, stir in remaining cilantro.
And your done!
Layer colslaw with chicken and top with chicken- so easy and so delicious.
The man friend threw his in a bunch of corn tortillas to make it more substantial. You could also serve on a bed of brown rice.
