Hi everyone! Hope you all enjoyed the holiday season this year- I sure did. This year was super relaxing, lots of sleeping in, long dog walks and tasty treaties 🙂
Now that we are basically finished with the holidays a lot of people are looking to make some healthier decisions so I thought I’d share some easy healthy weeknight meals over the next few weeks.
First up is one of my favourite raw dinners- most raw meals don’t keep me full for very long but this ‘pasta’ keeps me satiated for hours.
Kale parsley pesto over veggie noodles (tonight I chose carrots and zucchini)
1/2 bunch of chopped kale
1 head parsley
1 1/2 lemons juiced
1/4 cup chopped walnuts
3 cloves of garlic
1/4 cup water
2 tablespoons extra virgin olive oil
salt and peper to taste
Combine everything in a food processor and blend till smooth and then toss with raw noodles.
In order to make the noodles I use my favourite spiralizer. I have tried a few different ones and this one is my favourite for sure.
Spiralized veggies are a great way to make old boring veggie meals more exciting. Adding spiralized beets, carrots and apples to salads makes them seem like a whole new meal. Making pasta out of sweet potatoes or zucchini is a great healthy alternative to normal pasta. I love using veggie noodles in place of pasta for every recipe- Zuchini is great for tomato sauces and pesto’s while sweet potato noodles are amazing with a more creamy sauce.
I’ll stop blabbing on, but if you are looking for a way to increase veggies in your diet, a spiralizer would be a great addition to your kitchen appliances.
