Being Simone’s boyfriend, I am fortunate to be her guinea pig for some of her creative, delicious meals. Among the long list of favourites are the coconut crusted chicken and the cauliflower crust pizza. Recently, she added yet another to my favourite list. She “randomly” made a coconut prawn cake (much like a crab cake) that I could not get enough of.
Deeelicious!!! Words and pictures cannot do these tasty little gems justice. She combined them with an avocado, coconut, lime sauce that she “threw” together. A true treat for the tastebuds!! I have learned when she is randomly throwing ingredients together, I need to get my ass over to her place and enjoy the exquisite, healthy finished product of her creativity!!
Coconut prawn cakes (submitted to slightly indulgent Tuesdays): 1 pound peeled, deveined shrimp, ½ red pepper chopped,1 clove of garlic chopped, 2 green onions chopped, ½ cup cilantro, ½ cup coconut flakes (unsweetened, unsulfured), 1 egg, Juice of ½ lime, 1 tsp salt, coconut oil for frying… mix everything together in the food processor, roll into little balls and fry up a few minutes each side
Coconut avocado sauce:½ avocado, ¼ cup cilantro, ½ lime, ¼ cup coconut milk (canned full fat), ½ tsp salt… in a blender or food processor puree everything until creamy, add coconut milk if too thick or add avocado if too thin.
