Black bean brownies…why not!

Last night we celebrated my dad’s birthday at my sister’s place. She and my brother in law prepared lovely roast lamb dinner, my fav!

And I tried my hand at some black bean brownies with a chocolate glaze.

I’ve never made them, nor eaten them before but I figured why not give them a try (sorry for the crappy photo)

Black beans not only contain tons of fiber but they also are high in protein making these the perfect snack or post dinner treat.

Raw cacoa contains tons of antioxidants, vitamins and minerals and is known to lower blood pressure and improve circulation, promote cardiovascular function, neutralize free radicals, improve digestion and enhance physical and mental well being.

The verdict… delicious! so moist (hate that word!) and chocolately, they tasted very decadent 🙂

1 can black beans, 1/2 cup mashed banana, 1 egg, 2 Tbsp chia seeds, 1/4 cup coconut oil (melted), 1/4 raw cacao powder, 1 Tbsp vanilla, 1/2 cup coconut sugar, 3/4 cup chocolate chips.

Put all ingredients, except chocolate chips in a high speed blender and blend until smooth, stir in chocolate chips.

bake at 350 for 30 minutes

Chocolate glaze

1/2 cup semi sweet chocolate melted with 1/2 cup coconut milk (microwave 20 minutes and stir, repeat until melted) stir in 2 1/2 Tbsp coconut flour and about 2 tsp agave nectar/ maple syrup or honey, stir well. Put in the fridge for about 20 minutes and your good to go 🙂
