Last minute trip

This morning I got an invitation from a friend to head out of town for 2 days: swimming, tanning, sleeping, eating, drinking here I come :), never needed a break more.

Seeing as this trip came completely out of the blue I am leaving behind a full fridge with a lot of produce… I hate things to go bad so I did what I always do when I notice the produce is at the end of its life, I made a everything but the kitchen sink ‘soup’ of sorts. I just chopped up everything I had in my fridge, added a can of chickpeas and a carton of chicken broth and vola ‘soup’

I just baggied it all up into single portions and threw it in the freezer… now i’m ready for the inevitable back to school sickness, that I will pick up from over working/under sleeping.

Last night I had my sister and her boyfriend over for dinner, I made pulled pork tacos with a bunch of yummy taco fixings…

I made a raw corn, avocado, tomato salad a avocado and mango ‘salsa’, a tomato and red pepper salsa, and a mexican (ish) slaw. After a long day of work it was nice to just sit out on the patio and catch up over good food.

okay well i’m off for a little vacay, i’ll be back soon with some more yumminess

What does everyone else do when they have expiring veggies to use up? any other everything but the kitchen sink ‘recipes’ out there?

Pick me up

I woke up this morning feeling a little more sluggish than usual, probably because I stayed up past my super late bed time of 9pm, yes I am a nana… anyways as a little post gym treat I decided to whip up my version of a frappuccino. I’m not going to lie and say it tastes just like a Starbucks frap but I do prefer this version myself.

1 scoop chocolate protein powder (I use raw sunwarrior), 1 tsp raw cocoa powder, 1 tsp instant coffee, 1 Tbsp chia seeds, 1 frozen banana, 1 large handful of spinach, 1 cup of ice and about 1/2 cup almond milk. I normally drink my coffee black so I don’t add any extra sweetener however if you prefer a sweeter brew add a touch of your sweetener of choice.

hope you like it, it sure does the trick for me when i’m feeling slower than normal.

I have my sister and her boyfriend coming over for dinner and I’m making a big old mexican (ish) feast so i’ll be back later with some more deliciousness

Awkward?

Because I will still be working full time while going to school i’m trying to pre-read a few books for my first course. This morning, while on the seabus heading to work, my book of choice was Dr. Bernard Jensen’s Guide To Better Bowel Care. To be honest I didn’t think anything of whipping the book out of my bag and flipping through the pages en route to work however, when we were getting close to the other side I started looking around only to find about 15 people staring at me and my choice of reading material with embarrassed/disgusted faces… this made me think maybe I should read these more ‘sensitive’ topic books in the privacy of my own home, thoughts?

Moving right along, today was a pretty yummy day… i’m going through a bit of a blender phase right now because I have recently purchased the best blender in the world, so most meals are in smoothie form.

Breakfast was a un-pictured mocha, banana, spinach smoothie

1 frozen banana, 2 cups spinach, 1 scoop raw chocolate Sunwarrior protein powder,1 tsp instant coffee, 1tsp raw cacao powder, 1Tbsp chia seeds, 1 cup ice and about 1/2 cup almond milk

Lunch was also another blended treat, I thought i’d try my hand at a raw soup of sorts

2 raw beets peeled and chopped, 1 carrot, 1 stalk celery, 1/2 small zucchini, handful cherry tomatoes, handful of fresh dill, 1/2 lemon squeezed, 1 clove garlic, handful of spinach and about 1 cup water.Blend well in vitamix.

I was a bit skeptical but I was pleasently surprised, it was delish!

Around 3 I got hungry again and decided to dig around in my freezer for a bit of a ‘creative’ smoothie, at least for me… i’m normally a berry, banana smoothie kinda gal.

Grape, pineapple and spinach smoothie

1 cup frozen grapes, 1 cup frozen pineapple, 2 cups baby spinach, 2 Tbsp hemp hearts, 1 cup ice and about 1/2 cup almond milk… so yummy!

Welcome to my little corner of the blogging world, starting in September I will be going to school, part-time, to become a registered and certified holistic nutritionist :). After struggling with food allergies (wheat, gluten, dairy, eggs, artificial sweeteners), some serious tummy troubles as well as the anxiety/depression that goes along with them, I have decided to take my health in my own hands.
